Cabbage Soup

Given to me by a family friend. Great for those cold winter/rainy days, or those chilly days in fall. ( or those who just love soups and stews.

Ingredients

  • 1 lb. ground beef
  • 1 or 2 lg. onions, chopped
  • 2 cloves garlic, minced
  • 1/2 C. diced celery
  • 1 green pepper, chopped
  • 2 Tbs. oil
  • 1 28-oz. can tomatoes or 2 lb. frozen
  • 2 5-oz. cans tomato paste
  • 2 C. raw diced potatoes
  • 2 C. diced carrots
  • 4 C. beef stock
  • salt and pepper, to taste
  • 6 or 7 coarsely chopped cabbage

Directions


Saute first five ingredients in oil. Add remaining ingredients except cabbage. Simmer uncovered for 1 hour. Add cabbage and simmer for 1 more hour, adding more water if necessary up to 3 cups.
